Valentine’s Day is all about spending quality time with the people you love, and sometimes that means less time in the kitchen and more time chatting over a glass of rosé. Our co-owner, Tracy, has shared two quick, fuss-free dessert recipes that are perfect for a romantic evening—or any sweet occasion. Whip them up, pour your favorite rosé, and focus on what truly matters: good company, heartfelt conversation, and delicious treats. Enjoy!

Chocolate Ganache Tarts

Ingredients (Makes ~12 Large or 24 mini Tarts)
  • 8 frozen tart shells (or homemade if you’re feeling ambitious)
  • 8 oz semi-sweet or dark chocolate chips
  • 250 ml whipping cream
  • Garnishes (choose your favorite)
    • Flaky sea salt
    • Fresh fruit (like raspberries, strawberries, or sliced figs)
    • Edible flowers
 
Instructions
  1. Bake & Cool
    • Preheat your oven according to the tart shell package instructions.
    • Bake the shells until golden brown.
    • Remove from the oven and let them cool completely before filling.
  2. Make the Ganache
    • Place your chocolate chips in a heatproof bowl.
    • In a separate microwave-safe container, pour in the whipping cream and heat until hot but not boiling (around 2–3 minutes, depending on your microwave).
    • Carefully pour the hot cream over the chocolate chips. Cover the bowl with a lid or plate for about 3 minutes to allow the chocolate to soften.
  3. Stir & Fill
    • Whisk the mixture gently until it becomes a smooth ganache.
    • Spoon or pour the ganache into the cooled tart shells.
    • Let the ganache cool and set (you can pop them in the fridge to speed this up).
  4. Garnish & Serve
    • Top each tart with a sprinkle of flaky sea salt, fresh fruit, or edible flowers.
    • Enjoy immediately, or refrigerate until you’re ready to serve.

Strawberry Cheesecake Bites

Ingredients
  • 1–2 pints fresh strawberries, washed and dried
  • ½ cup melted chocolate (milk, dark, or white—your call!)
  • 4 oz cream cheese (room temperature)
  • ½ tsp vanilla extract (adjust to taste)
  • 2–3 Tbsp icing sugar (adjust to preferred sweetness)
  • Graham cracker crumbs (for dipping)
 
Instructions
  1. Core & Dip
    • Gently remove the tops of the strawberries and core out a small portion to make space for filling.
    • Dip the bottom (or pointed end) of each strawberry in melted chocolate.
    • Place them on a parchment-lined tray to let the chocolate set.
  2. Whip the Filling
    • In a small bowl, combine cream cheese, vanilla extract, and icing sugar.
    • Whip until the mixture is smooth and fluffy. Taste-test and adjust sweetness or vanilla as you prefer.
  3. Fill & Roll
    • Using a small spoon or piping bag, fill each strawberry with the cream cheese mixture.
    • Gently dip or roll the top of the filled strawberry in graham cracker crumbs to create that cheesecake effect.
  4. Chill & Serve
    • Place the filled strawberries back on the tray.
    • Refrigerate until you’re ready to serve, letting the filling set.
